The winter special "Homemade Pistachio Pesto Chicken Pasta" is one of them, featuring hand-made pesto paired with freshly grated 24-month-aged Parmesan cheese, enhancing the basil sauce's aroma and richness. Another signature dish, "Squid Ink Tagliatelle with Crab Roe," is also made with Canya's tagliatelle. Ray Yick explains that the "black" in this dish represents the theme color of Contrast.
